Soups & Broths

I only make a few soup recipes because I tend to like heartier dishes.;


  • Pappa al Pomodoro - This is a Tuscan recipe originally made by peasants. It uses three-day-old bread, a vegetable broth, and fresh or canned tomatoes. It's simple, but delicious, especially on a cold winter day.
  • Zuppa di Pesce (Cioppino) - A classic Southern Italian seafood stew.

Broths are staples in our kitchen.  We always have homemade chicken, vegetable, and beef broths in our freezer so that we can use them whenever I want to make a risotto.
